  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup breadcrumbs (for topping)

Instructions

  1. Cook the elbow macaroni in a large pot of salted boiling water for 8-10 minutes until al dente. Drain and set aside.
  2. In a medium saucepan, melt butter over medium heat. Stir in flour to create a roux, then gradually add milk while stirring to prevent lumps. Cook until thickened.
  3. Add cheddar, mozzarella, and Parmesan cheese along with salt and pepper to the sauce and stir until melted.
  4. Combine the drained macaroni with the cheese sauce until well-coated.
  5. Preheat oven to 350°F (175°C). Transfer the mixture to a baking dish and top with breadcrumbs.
  6. Bake for 25-30 minutes until golden brown and crispy on top. Let cool slightly before serving.
