  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes with juices
  • 1 can (4 oz) diced green chiles (optional)
  • 4 cups beef broth (or chicken/vegetable broth)
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté diced onion for 2-3 minutes until translucent.
