- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup buttermilk
- 1/3 cup melted butter
- 1 large egg
- 1/4 cup honey
- 2 tbsp additional melted butter (for brushing)
- Extra honey for drizzling
Instructions
- In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt. Whisk them together until well incorporated.
- In a separate bowl, whisk together the buttermilk, melted butter, egg, and honey. Pour the wet mixture into the dry ingredients and stir until just combined.
- Preheat your oven to 375°F (190°C). Grease a mini muffin tin with butter or cooking spray. Spoon the batter into each cup, filling them about 3/4 full.
- Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and immediately brush with melted butter and drizzle with honey.
Notes
- For a dairy-free version, substitute buttermilk with 1 cup of milk mixed with 1 tbsp of lemon juice or vinegar.
