- 1 cup long-grain rice
- 2 cups chicken broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season chicken thighs with salt, pepper, and paprika. Brown the chicken for 5-6 minutes on each side.
- Remove the chicken and sautรฉ chopped onion, garlic, and bell pepper in the same skillet for 3-4 minutes until softened.
- Stir in rice and chicken broth; bring to a boil. Reduce heat, add chicken skin-side up, cover, and simmer for 25-30 minutes.
- Once cooked, let rest for a few minutes, then serve hot garnished with fresh parsley.
