Description

Ingredients

  • 4 chicken thighs (bone-in and skin-on for extra flavor)
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken thighs with salt, pepper, and paprika. Brown the chicken for 5-6 minutes on each side.
  2. Remove the chicken and sautรฉ chopped onion, garlic, and bell pepper in the same skillet for 3-4 minutes until softened.
  3. Stir in rice and chicken broth; bring to a boil. Reduce heat, add chicken skin-side up, cover, and simmer for 25-30 minutes.
  4. Once cooked, let rest for a few minutes, then serve hot garnished with fresh parsley.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • You can use brown rice, but adjust the cooking time and liquid amount.
  • Chicken breasts can be a leaner alternative to thighs.
