- 2 boneless, skinless chicken breasts
- 1 (10 oz) can Rotel tomatoes and green chilies
- 1 (15 oz) can corn, drained
- 1 (15 oz) can black beans, drained and rinsed
- 1 packet ranch seasoning mix
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 (8 oz) package cream cheese
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 1/4 cup chopped green onions
- 1 cup chicken broth
Instructions
- Place the chicken breasts at the bottom of the slow cooker.
- Add Rotel tomatoes, corn, black beans, ranch seasoning, cumin, chili powder, onion powder, garlic powder, salt, and pepper over the chicken.
- Pour chicken broth over the ingredients.
- Place the block of cream cheese on top.
- Cover and cook on low for 6-8 hours or on high for 4 hours.
- Remove the chicken breasts, shred them using two forks, and return the shredded chicken to the slow cooker.
- Stir in shredded cheddar cheese and crumbled bacon until well combined.
- Serve hot, garnished with chopped green onions.
Notes
- For a spicier chili, add extra chili powder or diced jalapeños.
