  • 2 boneless, skinless chicken breasts
  • 1 (10 oz) can Rotel tomatoes and green chilies
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 packet ranch seasoning mix
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (8 oz) package cream cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions
  • 1 cup chicken broth

Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Add Rotel tomatoes, corn, black beans, ranch seasoning, cumin, chili powder, onion powder, garlic powder, salt, and pepper over the chicken.
  3. Pour chicken broth over the ingredients.
  4. Place the block of cream cheese on top.
  5. Cover and cook on low for 6-8 hours or on high for 4 hours.
  6. Remove the chicken breasts, shred them using two forks, and return the shredded chicken to the slow cooker.
  7. Stir in shredded cheddar cheese and crumbled bacon until well combined.
  8. Serve hot, garnished with chopped green onions.
