Description

  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth

  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 package (9 ounces) refrigerated cheese tortellini
  • 3 cups fresh spinach leaves
  • 1/2 cup heavy cream
  • Grated Parmesan cheese, for serving

Instructions

  1. In a large pot over medium heat, cook the Italian sausage until browned. Remove excess fat if necessary.
  2. Add diced onion and cook until translucent, about 3 minutes.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Pour in chicken broth, diced tomatoes, and tomato sauce. Add Italian seasoning and crushed red pepper flakes. Season with salt and pepper to taste. Bring to a boil.
  5. Add cheese tortellini to the pot and cook according to package instructions, usually about 7-9 minutes.
  6. Stir in fresh spinach leaves and cook until wilted, about 2 minutes.
  7. Reduce heat to low and stir in heavy cream. Simmer for an additional 2-3 minutes.
  8. Serve hot, garnished with grated Parmesan cheese.
