Description

Enjoy this crispy and flavorful Ritz Cracker Chicken, a simple yet delicious dish that combines tender chicken breasts with a buttery cracker coating.

Ingredients

Scale
    • 4 boneless, skinless chicken breasts (about 6 oz each)
    • 1 sleeve (about 36) Ritz crackers, crushed (about 1 1/2 cups of crumbs)
    • 1/2 cup finely grated Parmesan cheese (the powdery kind works best)
    • 1 teaspoon garlic powder (or 2 cloves fresh minced garlic for more punch)
    • 1 teaspoon paprika (smoked paprika adds wonderful depth)
    • 1/2 teaspoon kosher salt (adjust to taste)
    • 1/4 teaspoon freshly ground black pepper
    • 2 large eggs, beaten (you can add 1 tbsp water to thin slightly)
    • 1/4 cup melted butter (unsalted is best to control sodium)

Optional additions: 1/2 teaspoon dried thyme, 1/4 teaspoon onion powder, or a pinch of cayenne for heat

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a shallow bowl, pour the buttermilk. In another shallow bowl, combine the crushed Ritz crackers, garlic powder, paprika, salt, pepper, and Parmesan cheese (if using).
  3. Dip each chicken breast into the buttermilk, ensuring it is fully coated.
  4. Press the buttermilk-coated chicken into the cracker mixture, covering all sides thoroughly.
  5. Place the coated chicken breasts onto the prepared baking sheet.
  6. Drizzle the melted butter evenly over the chicken breasts.
  7. Bake for 25-30 minutes, or until the chicken is cooked through and the coating is golden brown.
  8. Garnish with chopped fresh parsley before serving.

Notes

  • For a spicier version, add a pinch of cayenne pepper to the cracker mixture.
  • Serve with mashed potatoes, steamed vegetables, or a side salad for a complete meal.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
