- 2 salmon fillets (6–8 oz each)
- 1 tbsp olive oil
- 2 tbsp butter (divided)
- Salt and pepper to taste
- 2 cloves garlic (minced)
- 2 cups fresh spinach (chopped)
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 tsp nutmeg
- 1 tbsp lemon juice
- Lemon wedges for garnish
Instructions
- Pat salmon dry and season with salt and pepper
- Heat oil and 1 tbsp butter in skillet, cook salmon 4-5 minutes per side
- Remove salmon and make sauce with remaining butter, garlic, spinach, cream, Parmesan, nutmeg and lemon juice
- Return salmon to pan and spoon sauce over fillets
- Garnish with lemon wedges and serve immediately

- For crispier skin, start with cold pan and gradually increase heat
