Ingredients

  • 2 salmon fillets (68 oz each)
  • 1 tbsp olive oil
  • 2 tbsp butter (divided)
  • Salt and pepper to taste
  • 2 cloves garlic (minced)
  • 2 cups fresh spinach (chopped)
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp nutmeg
  • 1 tbsp lemon juice
  • Lemon wedges for garnish

Instructions

  1. Pat salmon dry and season with salt and pepper
  2. Heat oil and 1 tbsp butter in skillet, cook salmon 4-5 minutes per side
  3. Remove salmon and make sauce with remaining butter, garlic, spinach, cream, Parmesan, nutmeg and lemon juice
  4. Return salmon to pan and spoon sauce over fillets
  5. Garnish with lemon wedges and serve immediately

Notes

  • For crispier skin, start with cold pan and gradually increase heat
  • Use fresh salmon for best texture and flavor
  • Don’t overcrowd the pan – cook in batches if needed
  • Adjust sauce thickness with more cream or Parmesan as needed
