  • 2 ¼ teaspoons active dry yeast

  • 4 cups all-purpose flour

  • 1 cup shredded Parmesan cheese
  • 8 ounces mozzarella cheese, cut into 16 equal pieces
  • 10 cups water
  • ⅔ cup baking soda
  • 1 large egg, beaten
  • Coarse sea salt, for sprinkling

Instructions

  1. In a large mixing bowl, combine warm water and yeast. Let sit for 5 minutes until frothy.
  2. Stir in salt and sugar until dissolved.
  3. Gradually add flour, chopped rosemary, and shredded Parmesan cheese, mixing until a dough forms.
  4. Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
  6. Preheat the oven to 450°F (232°C) and line two baking sheets with parchment paper.
  7. In a large pot, bring 10 cups of water and baking soda to a boil.
  8. Punch down the risen dough and divide it into 16 equal pieces.
  9. Flatten each piece into a rectangle, place a piece of mozzarella in the center, and fold the dough over the cheese, sealing the edges to form a ball.
  10. Carefully drop each dough ball into the boiling water for 30 seconds, then remove with a slotted spoon and place on the prepared baking sheets.
  11. Brush each pretzel with beaten egg and sprinkle with coarse sea salt.
  12. Bake for 12-15 minutes, or until golden brown.
  13. Allow to cool slightly before serving.
