- 1/2 cup olive oil, for frying
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese

Instructions
- Preheat oven to 375°F (190°C). Pound thick chicken breasts to 1/2 inch thickness. Season with salt and pepper.
- Place flour, beaten eggs, and a mixture of panko, parmesan, garlic powder, and Italian seasoning in separate shallow dishes. Dredge chicken in flour, then dip in egg, and coat with panko mixture.
- Heat olive oil in a large skillet over medium heat. Fry chicken for 3-4 minutes per side, until golden brown. Place on a baking sheet lined with foil.
- Spoon marinara sauce over each chicken breast, top with mozzarella cheese. Bake for 10-15 minutes, or until cheese is melted and chicken is cooked through (165°F/74°C).
- Garnish with fresh parsley and serve hot.
