Scale
- 15 ounces (one can) Libby’s 100% Pure Pumpkin
- 3 cups All-Purpose Flour
- 2 cups Granulated Sugar
- 1 cup Vegetable Oil
- 4 large Eggs
- 1/3 cup Water
- 2 teaspoons Baking Soda
- 1 teaspoon Salt
- 1 teaspoon Ground Cinnamon
- 1/2 teaspoon Ground Nutmeg
- 1/4 teaspoon Ground Cloves
- 1 cup Chopped Walnuts or Pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9×5 inch loaf pans.
- In a large bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves. Set aside.
- In a separate large bowl, combine pumpkin puree, sugar, oil, eggs, and water. Mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- If desired, fold in chopped walnuts or pecans.
- Pour batter evenly into prepared loaf pans.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
- Slice and serve. Enjoy!
Notes
- Use room temperature ingredients for better mixing.
- Don’t overmix the batter to avoid a tough loaf.
- Check for doneness with a toothpick; if it comes out wet, bake longer.
- Cool completely before slicing to prevent crumbling.
- Store in an airtight container at room temperature for up to 3 days, refrigerate for a week, or freeze for 2-3 months.
