- 4 salmon fillets
- 1/4 cup honey
- 3 tablespoons sriracha sauce
- 2 cloves garlic, minced
- Juice of 1 lime
- 2 cups cooked quinoa
- 1 cup cucumber, diced
- 1 cup red bell pepper, diced
- 1 avocado, sliced
- Sesame seeds, for garnish
- Green onions, chopped, for garnish
- Salt and pepper, to taste
Instructions
- In a bowl, mix honey, sriracha, garlic, and lime juice for the marinade.
- Marinate the salmon fillets for at least 30 minutes.
- Preheat the grill or grill pan over medium-high heat.
- Remove salmon from marinade and grill for 4-5 minutes on each side.
- Assemble bowls starting with quinoa, topped with grilled salmon, cucumber, bell pepper, and avocado.
- Garnish with sesame seeds and green onions before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For added heat, serve with extra sriracha on the side.
- Marinade can be prepared a day in advance.
- Use brown rice or other grains if you prefer instead of quinoa.
