- 1 pound Italian sausage, casings removed
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 3 cups russet potatoes, peeled and sliced
- 2 cups kale, chopped
- 1 cup heavy cream
- 1/2 teaspoon crushed red pepper flakes (optional)
- Salt and black pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- In a large pot over medium heat, cook the Italian sausage until browned, breaking it into crumbles. Remove the sausage and set aside.
- In the same pot, add olive oil and sauté the diced onion until translucent. Add the minced garlic and cook for another minute.
- Pour in the chicken broth and bring to a boil. Add the sliced potatoes and cook until tender, about 10 minutes.
- Reduce the heat to low and stir in the cooked sausage, chopped kale, and heavy cream. Cook until the kale is wilted and the soup is heated through.
- Season with crushed red pepper flakes, salt, and black pepper to taste.
- Serve hot, garnished with grated Parmesan cheese if desired.

- For a lighter version, substitute half-and-half for the heavy cream.
