Description

These Healthy Sourdough Discard Empanadas offer a delightful way to utilize sourdough discard, resulting in a flaky and flavorful pastry filled with your choice of savory ingredients. Perfect for a wholesome snack or meal.

Ingredients

Scale
  • 1 cup sourdough discard
  • 1 ½ cups whole wheat flour
  • ½ teaspoon salt
  • ¼ cup olive oil
  • ¼ cup cold water
  • Your choice of savory filling (e.g., seasoned vegetables, cooked meats, or cheese)
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a mixing bowl, combine sourdough discard, whole wheat flour, and salt.
  2. Add olive oil and mix until the mixture resembles coarse crumbs.
  3. Gradually add cold water, mixing until a dough forms. Adjust with additional water or flour as needed.
  4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  5. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  6. On a floured surface, roll out the chilled dough to about ⅛-inch thickness.
  7. Cut out circles using a round cutter or glass.
  8. Place a spoonful of your chosen filling in the center of each dough circle.
  9. Fold the dough over the filling to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges.
  10. Place the empanadas on the prepared baking sheet.
  11. Brush the tops with the beaten egg for a golden finish.
  12. Bake for 20-25 minutes, or until the empanadas are golden brown.
  13. Allow to cool slightly before serving.

Notes

  • Ensure the filling is not overly moist to prevent soggy empanadas.
  • Empanadas can be frozen before baking; bake from frozen, adding a few extra minutes to the baking time.
  • Experiment with different fillings to suit your taste preferences.
