Description

This Ham and Cheese Hash Brown Casserole combines tender hash browns, savory ham, and melted cheese in a creamy sauce, creating a comforting and hearty dish perfect for breakfast or brunch.

Ingredients

Scale
  • 4 cups shredded hash browns (thawed if frozen)
  • 1 ½ cups diced cooked ham
  • 1 ½ cups shredded cheddar cheese
  • ½ cup sour cream
  • ½ cup milk
  • 2 large eggs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp melted butter (for greasing the dish)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine the thawed hash browns, diced ham, chopped onion, condensed cream of mushroom soup, sour cream, shredded cheddar cheese, salt, and black pepper. Mix until well combined.
  3. Transfer the mixture to the prepared baking dish, spreading it evenly.
  4. Drizzle the melted butter over the top of the casserole.
  5. If using, sprinkle the crushed cornflakes cereal evenly over the top for added crunch.
  6. Bake in the preheated oven for 45-50 minutes, or until the casserole is bubbly and the top is golden brown.
  7. Remove from the oven and let it cool for a few minutes before serving.

Notes

  • For a different flavor, substitute cream of chicken soup for the cream of mushroom soup.
  • Feel free to add vegetables like bell peppers or spinach for added nutrition and color.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • To make ahead, assemble the casserole, cover, and refrigerate overnight. Bake as directed, adding an extra 5-10 minutes to the cooking time if needed.
