- 4 chicken thighs, skin-on and bone-in
- 3 tablespoons fish sauce
- 2 tablespoons sugar
- 2 tablespoons vegetable oil
- 1 stalk lemongrass, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon freshly grated ginger
- 1โ2 chili peppers, finely chopped (adjust to taste)
- Fresh herbs (cilantro, mint, and basil) for garnish
- Rice noodles or steamed rice, for serving
Instructions
- Prepare the marinade by combining fish sauce, sugar, vegetable oil, lemongrass, garlic, ginger, and chili peppers in a mixing bowl. Mix well and coat the chicken thighs. Marinate for at least 2 hours, preferably overnight.
- Preheat the grill to medium-high heat and lightly oil the grates.
- Grill the marinated chicken thighs for about 6-8 minutes on each side or until fully cooked with grill marks. Optionally, baste with leftover marinade during grilling.
- Let the chicken rest, then slice and serve garnished with fresh herbs alongside rice noodles or steamed rice.
