- 4 lbs russet potatoes, peeled and thinly sliced
- 3 cups shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 3 cups whole milk
- 1/2 cup heavy cream
- 1/4 cup butter
- 3 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1/2 tsp paprika
Instructions
- Preheat oven to 375°F (190°C). Thinly slice potatoes to 1/8-inch thickness.
- Layer half the potatoes in greased 9×13 baking dish, top with half the cheeses. Repeat layers, reserving some cheese for topping.
- Make cream sauce by melting butter, adding garlic, then whisking in milk, cream and seasonings. Pour over potatoes.
- Cover with foil and bake 45 minutes. Remove foil, add reserved cheese, and bake uncovered 30-40 minutes until golden and tender.
- Let stand 10 minutes before serving for best texture.
Notes
- For extra crispy edges, broil for the last 2-3 minutes of baking
- Let scalloped potatoes rest before serving to allow the sauce to thicken
- Add cooked bacon or ham between layers for a heartier version
