  • 4 lbs russet potatoes, peeled and thinly sliced
  • 3 cups shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cups whole milk
  • 1/2 cup heavy cream
  • 1/4 cup butter
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1/2 tsp paprika

Instructions

  1. Preheat oven to 375°F (190°C). Thinly slice potatoes to 1/8-inch thickness.
  2. Layer half the potatoes in greased 9×13 baking dish, top with half the cheeses. Repeat layers, reserving some cheese for topping.
  3. Make cream sauce by melting butter, adding garlic, then whisking in milk, cream and seasonings. Pour over potatoes.
  4. Cover with foil and bake 45 minutes. Remove foil, add reserved cheese, and bake uncovered 30-40 minutes until golden and tender.
  5. Let stand 10 minutes before serving for best texture.

Notes

  • For extra crispy edges, broil for the last 2-3 minutes of baking
  • Let scalloped potatoes rest before serving to allow the sauce to thicken
