Description

  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/4 cups warm water (105-115Β°F)
  • 2 tablespoons olive oil, plus more for greasing
  • 3 cups shredded cabbage
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and shredded cabbage, and cook until the cabbage is tender and slightly wilted, about 8-10 minutes. Remove from heat and let cool slightly.
  2. In a large bowl, combine the flour, yeast, sugar, salt, and pepper. In a separate bowl, dissolve the yeast in warm water and let it sit for 5 minutes until foamy. Add the yeast mixture and the remaining 1 tablespoon of olive oil to the dry ingredients. Mix until a shaggy dough forms. Add the cooled cabbage mixture and knead until well combined.
  3. Lightly grease a large bowl with olive oil. Place the dough in the bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for about 1-1.5 hours, or until doubled in size. Punch down the dough to release the air. Shape the dough into a loaf and place it in a greased 9Γ—5 inch loaf pan.
  4. Cover the loaf pan with plastic wrap and let the dough rise again in a warm place for about 30-45 minutes, or until it has risen above the edge of the pan. Preheat your oven to 375Β°F (190Β°C). Bake for 35-40 minutes, or until the cabbage bread is golden brown and sounds hollow when tapped on the bottom. Let it cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
