Easy Cheeseburger Soup

  • Total Time: 45 minutes
  • Yield: 6 servings 1x

Description

A creamy and hearty Easy Cheeseburger Soup that combines ground beef, vegetables, and cheddar cheese for a comforting meal reminiscent of a classic cheeseburger.

Ingredients

Scale
  • 1 pound ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 3 cups potatoes, peeled and diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 4 cups chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • Salt and freshly ground black pepper, to taste
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/4 cup sour cream

Instructions

  1. In a large pot over medium heat, cook the ground beef until browned. Remove excess fat if necessary.
  2. Add diced onion and minced garlic to the pot; cook until the onion is translucent, about 3 minutes.
  3. Stir in diced potatoes, carrots, celery, chicken broth, dried basil, and dried parsley. Season with salt and pepper to taste.
  4. Bring the mixture to a boil, then reduce heat and simmer until the vegetables are tender, about 15-20 minutes.
  5. In a separate saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes until bubbly.
  6. Gradually whisk in milk, ensuring no lumps remain. Cook until the mixture thickens, about 3-5 minutes.
  7. Stir the milk mixture into the soup pot, combining well.
  8. Add shredded cheddar cheese to the soup, stirring until melted and smooth.
  9. Remove the pot from heat and stir in sour cream until fully incorporated.
  10. Serve hot, garnished with additional shredded cheese or chopped parsley if desired.

Notes

  • For a lighter version, substitute ground turkey for ground beef and use low-fat milk and cheese.
  • Top with crumbled bacon or diced pickles for an extra cheeseburger flavor.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
