- 1 small onion, diced
- 3 cloves garlic, minced
- 3 cups potatoes, peeled and diced

- 4 cups chicken broth

- 1 teaspoon dried parsley
- Salt and freshly ground black pepper, to taste
- 4 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 2 cups milk
- 2 cups shredded cheddar cheese
- 1/4 cup sour cream
Instructions
- In a large pot over medium heat, cook the ground beef until browned. Remove excess fat if necessary.
- Add diced onion and minced garlic to the pot; cook until the onion is translucent, about 3 minutes.
- Stir in diced potatoes, carrots, celery, chicken broth, dried basil, and dried parsley. Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce heat and simmer until the vegetables are tender, about 15-20 minutes.
- In a separate saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes until bubbly.
- Gradually whisk in milk, ensuring no lumps remain. Cook until the mixture thickens, about 3-5 minutes.
- Stir the milk mixture into the soup pot, combining well.
- Add shredded cheddar cheese to the soup, stirring until melted and smooth.
- Remove the pot from heat and stir in sour cream until fully incorporated.
- Serve hot, garnished with additional shredded cheese or chopped parsley if desired.
Notes
- For a lighter version, substitute ground turkey for ground beef and use low-fat milk and cheese.
- Top with crumbled bacon or diced pickles for an extra cheeseburger flavor.
