Instructions

  1. Place the eggs in a single layer in a saucepan and cover with cold water. Bring to a boil, then reduce heat to a simmer and cook for 10 minutes. Transfer eggs to an ice bath to cool completely before peeling.
  2. Once cooled, carefully peel the eggs and slice them in half lengthwise. Gently remove the yolks and place them in a mixing bowl. Arrange the egg white halves on a serving platter.
  3. Mash the yolks with a fork until smooth. Add mayonnaise, Dijon mustard, white vinegar, smoked paprika, cayenne pepper, salt, and black pepper. Mix until creamy and well combined.
  4. Spoon or pipe the yolk mixture back into the egg white halves. Sprinkle with extra smoked paprika and garnish with fresh chives or parsley for a pop of color and flavor.
