Instructions
- Place the eggs in a single layer in a saucepan and cover with cold water. Bring to a boil, then reduce heat to a simmer and cook for 10 minutes. Transfer eggs to an ice bath to cool completely before peeling.
- Once cooled, carefully peel the eggs and slice them in half lengthwise. Gently remove the yolks and place them in a mixing bowl. Arrange the egg white halves on a serving platter.
- Mash the yolks with a fork until smooth. Add mayonnaise, Dijon mustard, white vinegar, smoked paprika, cayenne pepper, salt, and black pepper. Mix until creamy and well combined.
- Spoon or pipe the yolk mixture back into the egg white halves. Sprinkle with extra smoked paprika and garnish with fresh chives or parsley for a pop of color and flavor.
