- 1 zucchini, diced
- 1 can (14.5 ounces) diced tomatoes
- 4 cups chicken broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes (optional)
- 2 cups cooked chicken, shredded
- 1 can (15 ounces) cannellini beans, drained and rinsed
- 2 cups fresh spinach leaves
- Salt and black pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic; sauté until the onion becomes translucent.
- Add the sliced carrot, celery, red bell pepper, and zucchini to the pot. Cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften.
- Pour in the diced tomatoes with their juice and the chicken broth. Stir in the dried basil, oregano, thyme, and red pepper flakes if using. Bring the mixture to a boil.
- Once boiling, reduce the heat to low and let the soup simmer for about 10 minutes, allowing the flavors to meld.
- Add the shredded cooked chicken and cannellini beans to the pot. Stir well and continue to simmer for another 5 minutes.
- Stir in the fresh spinach leaves and cook until they wilt, about 2 minutes. Season the soup with salt and black pepper to taste.
- Ladle the soup into bowls and top with grated Parmesan cheese if desired. Serve hot.
