Instructions

  1. In a large pot over medium heat, cook the ground beef until browned. Remove the beef with a slotted spoon and set aside, leaving the drippings in the pot.
  2. Add olive oil to the pot along with the diced onion and minced garlic; sauté until the onion becomes translucent.
  3. Return the cooked ground beef to the pot. Add the diced potatoes, sliced carrots, sliced celery, diced tomatoes with their juice, beef broth, dried basil, dried parsley, and dried thyme. Stir to combine.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the vegetables are tender. Season with salt and black pepper to taste.
  5. In a small bowl, whisk together the whole milk and all-purpose flour until smooth. Stir this mixture into the soup and cook for an additional 5 minutes, allowing the soup to thicken.
  6. Stir in the shredded cheddar cheese until melted and well combined.
