Description

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts 
  • 1 small onion, diced  
  • 3 garlic cloves, minced  
  • 1 tsp dried oregano 
  • 1 tsp dried basil  
  • 1/2 tsp red pepper flakes (optional)  
  • 4 cups chicken broth
  • 1 (24 oz) jar marinara sauce 
  • 1 cup heavy cream 
  • 1 cup grated Parmesan cheese 
  • 1 cup shredded mozzarella cheese
  • Salt & black pepper to taste
  • Fresh basil for garnish 

Instructions

  1. Place the chicken breasts in the crock pot.
  2. Add chicken broth, diced tomatoes, chopped onion, minced garlic, dried basil, dried oregano, salt, and black pepper.
  3. Cover and cook on low for 6-7 hours, or until the chicken is cooked through and tender.
  4. Remove the chicken from the crock pot, shred it using two forks, and return it to the pot.
  5. Stir in the heavy cream and grated Parmesan cheese until well combined.
  6. Add the pasta to the crock pot, cover, and cook on high for an additional 30-40 minutes, or until the pasta is tender.
  7. Stir the soup well before serving.
  8. Garnish each bowl with fresh basil leaves and additional grated Parmesan cheese, if desired.

Notes

  • For a lighter version, substitute half-and-half for the heavy cream.
  • Use whole wheat pasta for added fiber and nutrients.
