- 1.5 lbs boneless, skinless chicken breasts
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes (optional)
- 4 cups chicken broth
- 1 (24 oz) jar marinara sauce
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- Salt & black pepper to taste
- Fresh basil for garnish
Instructions
- Place the chicken breasts in the crock pot.
- Add chicken broth, diced tomatoes, chopped onion, minced garlic, dried basil, dried oregano, salt, and black pepper.
- Cover and cook on low for 6-7 hours, or until the chicken is cooked through and tender.
- Remove the chicken from the crock pot, shred it using two forks, and return it to the pot.
- Stir in the heavy cream and grated Parmesan cheese until well combined.
- Add the pasta to the crock pot, cover, and cook on high for an additional 30-40 minutes, or until the pasta is tender.
- Stir the soup well before serving.
- Garnish each bowl with fresh basil leaves and additional grated Parmesan cheese, if desired.

- For a lighter version, substitute half-and-half for the heavy cream.
- Use whole wheat pasta for added fiber and nutrients.
