Description

Ingredients

  • 1 pound fresh or frozen peas
  • 4 ounces feta cheese, crumbled
  • 1/4 cup thinly sliced red onion
  • 1/4 cup fresh mint, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. If using fresh peas, shell and blanch them in boiling water for 1-2 minutes. Transfer to an ice bath to stop cooking. If using frozen peas, thaw under cold running water. Drain thoroughly.
  2. In a large bowl, combine the prepared peas, crumbled feta cheese, thinly sliced red onion, and chopped fresh mint.
  3. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
  4. Pour the vinaigrette over the pea mixture and gently toss to combine. Taste and adjust seasoning as needed.
  5. Serve immediately or chill for later.
