- 1 pound fresh or frozen peas
- 4 ounces feta cheese, crumbled
- 1/4 cup thinly sliced red onion
- 1/4 cup fresh mint, chopped
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- If using fresh peas, shell and blanch them in boiling water for 1-2 minutes. Transfer to an ice bath to stop cooking. If using frozen peas, thaw under cold running water. Drain thoroughly.
- In a large bowl, combine the prepared peas, crumbled feta cheese, thinly sliced red onion, and chopped fresh mint.
- In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
- Pour the vinaigrette over the pea mixture and gently toss to combine. Taste and adjust seasoning as needed.
- Serve immediately or chill for later.
