Description

  • 1.5 lbs sirloin steak, thinly sliced
  • 1 tbsp all-purpose flour
  • 2 tbsp butter
  • 1 large onion, chopped
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup sour cream
  • 2 tbsp Dijon mustard
  • Salt and pepper to taste
  • Egg noodles or rice for serving
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Beef: Slice sirloin into thin strips. Coat with flour, salt, and pepper.
  2. Sauté Onions and Mushrooms: Melt butter in a large skillet. Add onion and mushrooms; sauté until tender. Add garlic; cook until fragrant.
  3. Sear the Beef and Simmer: Remove vegetables and set aside. Sear beef on all sides. Return vegetables to the skillet. Pour in beef broth; bring to a simmer. Cover and simmer for 20-25 minutes, until beef is tender.
  4. Finish the Sauce and Serve: Remove from heat. Stir in sour cream and Dijon mustard. Season with salt and pepper. Serve over egg noodles or rice, garnished with parsley.

Notes

  • For a richer flavor, use a dry red wine instead of some of the beef broth.
  • Add a splash of Worcestershire sauce for extra depth.
  • If you don’t have sour cream, you can substitute Greek yogurt for a tangier flavor.
  • For a vegetarian version, replace the beef with mushrooms or tofu.
