- For the frosting: 4 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tablespoon milk
- 1 tsp vanilla extract
Instructions
- Whisk together the dry ingredients: flour, sugar, baking powder, cinnamon, and salt in a large mixing bowl.
- In another bowl, whisk together the wet ingredients: milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined, leaving the batter slightly lumpy.
- Preheat a greased non-stick skillet over medium heat and pour ΒΌ cup of batter onto the skillet. Cook until bubbles form, then flip and cook until golden brown.
- Prepare the cream cheese frosting by beating softened cream cheese, powdered sugar, milk, and vanilla until smooth.
- Stack pancakes and drizzle with cream cheese frosting. Serve warm with a sprinkle of cinnamon and chopped nuts if desired.
Notes
- If storing leftovers, keep them in an airtight container in the fridge for up to 3 days.
- Reheat pancakes in the microwave or in a pan over low heat.
- For a healthier option, use whole wheat flour and Greek yogurt in the frosting.
