  • 1 medium onion, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (12 ounce) package egg noodles
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • Optional: 1 cup frozen peas or mixed vegetables

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Grease a 9Γ—13 inch baking dish.
  2. In a large skillet, brown the ground beef over medium-high heat. Add the chopped onion and cook until the beef is no longer pink and the onion is softened. Drain any excess fat. Season with salt and pepper.
  3. Cook the egg noodles according to package directions. Drain well.
  4. In a large mixing bowl, combine the cooked egg noodles, cream of mushroom soup, sour cream, and 1 cup of shredded cheddar cheese. Mix well.
  5. Add the browned ground beef to the noodle and cheese mixture. If using, add frozen peas or mixed vegetables. Stir until well combined.
  6. Pour the mixture into the greased baking dish. Spread evenly and sprinkle the remaining 1 cup of shredded cheddar cheese over the top.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly. Let cool for a few minutes before serving.
