Cajun Potato Soup

  • Total Time: 35 minutes
  • Yield: 6 servings 1x

Description

Cajun Potato Soup is a creamy, spicy comfort dish that blends smooth potatoes with the bold flavors of Cajun seasoning. This Louisiana-inspired soup is perfect for chilly evenings, offering a balance of heat and creaminess. It’s an easy, one-pot meal that’s packed with flavor and customizable to your tastes.

Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 1 medium yellow onion, finely chopped
  • 1 green bell pepper, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons Cajun seasoning
  • Salt and black pepper to taste
  • For garnish: Green onions, smoked paprika, hot sauce

Instructions

  1. In a large pot, melt butter over medium heat. Add onions, bell pepper, and celery. Sauté for 5-7 minutes until softened.
  2. Stir in diced potatoes and garlic. Cook for 2-3 minutes, being careful not to brown the garlic.
  3. Add chicken broth and Cajun seasoning. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  4. Using an immersion blender, blend a few times to create a creamy base while leaving some potato chunks. If using a regular blender, puree part of the soup and return it to the pot.
  5. Stir in heavy cream, simmer for 5 minutes, and adjust seasoning with salt and pepper.
  6. Serve hot, garnished with green onions, smoked paprika, and hot sauce.

Notes

  • For extra spice, add cayenne pepper or diced jalapeños.
  • Use vegetable broth and coconut milk for a vegan version.
  • This soup stores well in the fridge for up to 4 days or can be frozen for up to 3 months.
  • If the soup is too thick, add more broth or water.
