Ingredients
Scale
- 4 large potatoes, peeled and diced
- 1 medium yellow onion, finely chopped
- 1 green bell pepper, diced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons butter
- 2 tablespoons Cajun seasoning
- Salt and black pepper to taste
- For garnish: Green onions, smoked paprika, hot sauce
Instructions
- In a large pot, melt butter over medium heat. Add onions, bell pepper, and celery. Sauté for 5-7 minutes until softened.
- Stir in diced potatoes and garlic. Cook for 2-3 minutes, being careful not to brown the garlic.
- Add chicken broth and Cajun seasoning. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
- Using an immersion blender, blend a few times to create a creamy base while leaving some potato chunks. If using a regular blender, puree part of the soup and return it to the pot.
- Stir in heavy cream, simmer for 5 minutes, and adjust seasoning with salt and pepper.
- Serve hot, garnished with green onions, smoked paprika, and hot sauce.
Notes
- For extra spice, add cayenne pepper or diced jalapeños.
- Use vegetable broth and coconut milk for a vegan version.
- This soup stores well in the fridge for up to 4 days or can be frozen for up to 3 months.
- If the soup is too thick, add more broth or water.
