Instructions

  1. Prepare the Cabbage Filling: Heat olive oil in a skillet, add onion and cook until softened. Add garlic and cook until fragrant. Add shredded cabbage, salt, and pepper. Cook until cabbage is tender and slightly caramelized. Let cool slightly.
  2. Make the Dough: Combine warm water, sugar, and yeast in a bowl. Let sit until foamy. Add olive oil, salt, and gradually add flour, mixing until a shaggy dough forms. Knead on a floured surface until smooth and elastic.
  3. Assemble and Proof the Bread: Place dough in an oiled bowl, cover, and let rise until doubled. Punch down the dough. Roll into a rectangle, spread cooled cabbage filling, leaving a border. Roll into a log and pinch seams. Place seam-side down on a baking sheet lined with parchment paper. Cover and let proof for another 30 minutes.
  4. Bake the Cabbage Bread: Preheat oven to 375Β°F (190Β°C). Brush the top of the loaf with beaten egg. Bake until golden brown and sounds hollow when tapped. Let cool on the baking sheet before transferring to a wire rack.
