Description
These Beef Enchiladas with Red Sauce are the ultimate comfort food! Tender ground beef, seasoned to perfection, rolled in warm corn tortillas, and smothered in a rich, homemade red sauce. This easy recipe is perfect for a weeknight dinner or a weekend gathering.
Ingredients
Scale
- 1 pound ground beef
- 1 medium onion, chopped
- 1 packet enchilada seasoning
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can tomato sauce
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 12 corn tortillas
- 2 cups shredded cheddar cheese
- Optional toppings: sour cream, cilantro, avocado
Instructions
- In a large skillet over medium-high heat, brown the ground beef and chopped onion. Drain off any excess grease. Stir in the enchilada seasoning and mix well.
- In a saucepan, combine the crushed tomatoes, tomato sauce, chili powder, cumin, garlic powder, salt, and pepper. Bring to a simmer over medium heat and cook for 15-20 minutes, stirring occasionally.
- To prevent cracking, warm the corn tortillas. You can do this by wrapping them in a damp paper towel and microwaving for 30 seconds, or by lightly heating them on a dry skillet or comal.
- Preheat your oven to 350Β°F (175Β°C). Dip each warmed tortilla in the red sauce, then fill with the seasoned ground beef and a sprinkle of cheese. Roll up the tortilla and place it seam-down in the prepared baking dish. Pour the remaining red sauce over the enchiladas and top with the remaining cheese. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
Notes
- Use high-quality ground beef for the best flavor.
- Donβt skip warming the tortillas β this prevents them from cracking.
- Feel free to customize the filling with your favorite vegetables, like bell peppers or corn.
- For a spicier kick, add a pinch of cayenne pepper to the red sauce.
- Get creative with toppings! Sour cream, guacamole, cilantro, and diced tomatoes are all great options.
