  • 1 medium onion, chopped
  • 1 packet enchilada seasoning
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 12 corn tortillas
  • 2 cups shredded cheddar cheese
  • Optional toppings: sour cream, cilantro, avocado

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef and chopped onion. Drain off any excess grease. Stir in the enchilada seasoning and mix well.
  2. In a saucepan, combine the crushed tomatoes, tomato sauce, chili powder, cumin, garlic powder, salt, and pepper. Bring to a simmer over medium heat and cook for 15-20 minutes, stirring occasionally.
  3. To prevent cracking, warm the corn tortillas. You can do this by wrapping them in a damp paper towel and microwaving for 30 seconds, or by lightly heating them on a dry skillet or comal.
  4. Preheat your oven to 350Β°F (175Β°C). Dip each warmed tortilla in the red sauce, then fill with the seasoned ground beef and a sprinkle of cheese. Roll up the tortilla and place it seam-down in the prepared baking dish. Pour the remaining red sauce over the enchiladas and top with the remaining cheese. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
