- 1 teaspoon vanilla extract
- 1/4 cup milk
- 3 very ripe bananas, mashed
- Β½ cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 375Β°F (190Β°C). Grease and flour a 9Γ5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
- In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
- Fold in the mashed bananas and, if desired, chopped walnuts or pecans. Be careful not to overmix.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover it loosely with aluminum foil.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
