  • 1 teaspoon baking soda

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 3 very ripe bananas, mashed
  • Β½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 375Β°F (190Β°C). Grease and flour a 9Γ—5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  5. Fold in the mashed bananas and, if desired, chopped walnuts or pecans. Be careful not to overmix.
  6. Pour the batter into the prepared loaf pan and spread evenly.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover it loosely with aluminum foil.
  8. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
