  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 red onion, finely chopped
  • 1/2 cup chopped fresh cilantro
  • 2 limes, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Optional: JalapeΓ±o, diced, for extra heat

Instructions

  1. Gently dice the avocados and place them in a large bowl. Be careful not to mash them.
  2. Rinse and drain the black beans thoroughly. Add them to the bowl with the avocado.
